RESTAURANT INTERIOR DESIGN & PROJECT MANAGEMENT
Developed for Pacific Hospitality Group, Olive & Hay restaurant at The Meritage Resort & Spa is a modern farmhouse bistro. The classic design features a light, neutral color palette with pops of drama achieved through the use of lush green potted olive trees, mixed metals, tobacco leathers and rich black accents. Geometric cement floor tiles and distressed wood flooring provide the backdrop for a mix of Carrera marble and distressed wood tabletops, French brasserie-style chairs and custom light fixtures. Large expansive windows look out upon the al fresco dining patio to complete the experience.
Shannon created the restaurant and patio interior design; prepared plans, FF&E and material reference specifications; managed the procurement process; provided general contractor and construction supervision; and oversaw the installation and finishing touches. Completed in 2020.
Fun Fact: The inspiration for the artwork, came from Shannon's 2018 trip to Rome and Arezzo, Italy
